History & tradition


For the first time, an inn and brewery for Schwanen is mentioned in Schwanengasse under Schwanenwirt Johann Bueler. This included a distillery and a larger farm.

Over the centuries the owners and hosts changed, but the location always remained the same.


On October 6th, 1864, master brewer Josef Laib acquired the swan tavern with a courtyard, stables, brewery, distillery, bowling alley and vegetable garden.


The son Albert Laib takes over the swans as the new swan host. His daughter Kreszentia Laib married master brewer and farmer Dominikus Miller in 1938 and ran the Schwanen for almost half a century.


The inheritance is carried on by son Karl and his wife Hedi.

Both generations of Miller work hand in hand in the design and implementation of what was then the company that is today.


Not only does the brewery specialize in the production of draft beer, but also a completely new construction of the catering area with corresponding changes.


In October, for Dominikus Miller’s 100th birthday, the “DOMINIKUS lager” is bottled in 0.33 l bottles.


On July 6th, 2005 we are with our Micha´s brewing seminars started.

Master brewer Michael Miller shows you how our beer is brewed. Includes a 5-course menu all about beer, many anecdotes about the history of beer and home-brewed Zwickel from the wooden barrel.


On April 23rd we sold the first bath beer.

After a short time it was sold out and production increased.


The sons Dominic and Michael Miller take over the helm. New ideas and plans have been the signature of both of them over the past few years. And the next big step should be implemented in the following year.

On March 1st, 2018 we were able to host the 10,000 guest at Micha´s BrauSeminar welcome.

A great success story continues.


On January 2nd the first part of the renovation of our brewery begins.

In just 2 weeks we will give the swan a new look.


What could be more obvious than a barbecue and a good beer.

Chef and owner Dominic Miller thought so too.

Inspired by the grills from Japan, he has developed grill tables so that every guest can grill their own steak to taste.

In summer in the beer garden and in winter in the distillery – we grill with you all year round .


1.5.2020 Schwanenwirt’s gusset finally in the bottle …

Our guests were steadfast and pushed us again and again to sell our favorite beer in bottles.

After a long search, we have also found the perfect casing for our best beer.
